Quick veggie burgers – a storecupboard supper

Last night I had a quick rummage round in the cupboards for something to make quickly.  I’d found a recipe for some veggie burgers in a magazine.  The ingredients were:

  • 1 tin pinto beans
  • 1 tin kidney beans
  • fresh coriander
  • 2 tbsps chopped red pepper
  • tin sweetcorn
  • 3 oz breadcrumbs
  • 2 eggs

I didn’t have all the ingredients so I substituted a tin of black eye beans for pinto beans, porridge oats for breadcrumbs, and dried corander for fresh.  I didn’t have any sweetcorn so I just left that out.

I put everything in the food processor and whizzed it all up.

Next I added two eggs to bind everything together.

Finally I shaped the mixture into four burgers and fried them. 

 

This was a quick, cheap and easy meal.  Substituting some of the ingredients worked ok, but next time I would use fresh coriander or curry powder to spice up the burgers a bit.  I might also add an onion or other vegetables.  2 tins of beans made it a bit too ‘beany’ as Bee observed!

  1. Pasta, tuna and tinned tomatoes is one of the fail safe recipes in this household. And pasta with a jar of pesto sauce and freshly grated parmesan.

    I always keep some of the part baked bread in the freezer as that always goes nicely with store cupboard throw togethers.
