Simple suppers – courgettes and couscous

Hello Friends,

I’m going out in a minute – I’ve started playing in our local community orchestra.  I just sit at the back of the 2nd violins and muddle my way through, but I am slowly getting better.

Going out at 7.30 means I don’t have a lot of time to cook (or blog!) so I need to find things that are simple and quick to cook.

This recipe is one I’ve adapted from Hugh Fearnley Whittingstall.  It is supposed to be cooked with quinoa, but when I looked at the price (£4 for a small packet) I decided to substitute couscous.

I fried the courgettes I had left over from the last veg box with some onions and fresh mint for about 20 minutes.

I poured water over the couscous, and after 5 minutes mixed the couscous with the vegetables.

To finish, I cooked some garlic bread which I bought cheap because it was due to go out of date.  All sorted within 30 minutes and I’ve got time to post before I go out!
